The ultimate throw-together easy work lunch, I love making these snack box style lunches about once a week. It’s nice to have a break from preparing foods and it’s a great way to use up what you have in the veggie or deli drawer. I also like to pack these when I know I have a hectic work day – they’re easy to eat while working and you can graze from the box as time permits. Today I went with a veggie-heavy version: carrots, celery, cauliflower and grape tomatoes along with some Mary’s Gone Crackers to dip in a prepared Ranch dip (purchased from a local produce store). I also added three creamy brie cheese wedges and some fresh blueberries. On this day I did also pack a yogurt parfait so this wasn’t all I ate at the office. Today’s lunch is packed in the 6 compartment Kinsho Bento Box.
