This colorful bento box lunch is perfect for days where you want a little variety but nothing too heavy. The turkey hummus rollup has a great flavor, particularly from the addition of roasted red peppers. One caveat to adding jarred roasted peppers – be sure to dry them thoroughly with a paper towel to avoid a soggy tortilla. I’ll admit these rollups were a little soggy by the time lunch rolled around, so lesson learned! (fresh red peppers would also work well) The rest of the bento was so quick to assemble – cheddar Naan crisps gave the perfect cheesy crunch and the fresh berries and Bread & Butter pickle chips gave it a great variety. The center compartment of this Kinsho Bento Box can be tricky to fill but it’s always ideal for a mozzarella cheese stick!
