When I’m craving something satisfying yet light & healthful I love this noodle salad made with Japanese soba noodles for cold lunches. Buckwheat-based, these noodles have a delicious nutty flavor that’s perfect served cold or room temperature, making it ideal for work lunches. This salad has a creamy peanut sauce and typically is packed with veggies, but on this day I just mixed the noodles with the peanut sauce and sprinkled with black sesame seeds. To round out the bento box I added shelled edamame, a cubed leftover chicken cutlet, red pepper strips, a mandarin orange and fresh blackberries. Today’s lunch is packed in the 6 compartment Kinsho Bento Box.
