Skewers are one of my favorite finger foods for a packed work lunch – they’re so easy to pick up and eat and the combinations are endless. Today I went with a simple Caprese-style skewer of fresh mozzarella balls, grape tomatoes and sprinkled dried basil. I used standard bamboo skewers from the grocery store that I cut down to fit and added a small container of balsamic glaze to drizzle over. For added protein I packed a small leftover baked chicken thigh (which I only took one bite of, as this lunch was super filling). I rounded out the bento with some fresh fruit, cucumbers in a bottled vinaigrette and a crunchy garlic cheese bread stick. Today’s lunch container is my favorite 6 Compartment Kinsho Bento Box and the small bottle is from a Coghlin’s Store & Pour variety pack.
Here are the bento ingredients listed:
- Caprese Skewers: Cherry Tomatoes & Pearl Mozzarella Balls w/ Dried Basil
- Mantova Balsamic Drizzle
- Oven Roasted Chicken Thigh – boneless skinless thigh baked with Italian dressing, seasoned breadcrumbs & parmesan cheese (dinner leftover)
- Fresh Pineapple Cubes
- Mandarin Orange
- Cucumber Slices in Italian Vinaigrette
- Garlic Romano Cheese Sticks (John Wm Macy’s brand)
Hope you’re eating something good today. 💚 Happy lunch!
