Tuna is such a great source of lean protein and is always a go-to in my packed lunch rotation. Today I packed a low carb lunch with a simple tuna salad made with safe catch drained tuna, mayonnaise, celery and paprika served on Romaine leaves. To dip in the tuna salad I added cucumber rounds, red pepper chunks and flax seed crackers. I made this lunch low carb but you can always add whole grain crackers or mini pita breads or make it into a sandwich or wrap. To round out the bento I added a small handful of macadamia nuts, fresh raspberries and a mozzarella string cheese. Simple and satisfying! Today’s lunch is packed in a 5 Compartment Kinsho Bento Box.
