This low carb strawberry balsamic salad gives all the vibes of Fall flavors but is light enough to eat year-round. It features both strawberries and pineberries – a gorgeous white berry that tastes like a cross between a strawberry and a pineapple. For the greens I added a mix of spinach and torn Romaine leaves to main bowl. Aside from the berries the toppings are crumbled blue cheese, sliced red onion and candied maple pecans (I used a low carb version from The Nut Bakery). The balsamic dressing has a hint of sweetness and poppy seeds (ingredients below). Today I didn’t add a protein but this is excellent with grilled chicken or steak.
