This was such a fun salad lunch bento to pack. I did a low carb keto lunch version here but you certainly can modify for any eating style. I used silicone muffin cups as dividers for the toppings – this made it so easy to pull out and add to the salad. For the taco meat I also used a silicone baking cup to remove to heat in the microwave. This Bentgo Salad Container has a removable dressing container in the center that was perfect for the salsa to drizzle over. The Quest tortilla chips added a nice crunch in place of tortilla strips. I also packed a Wholly Guacamole single on the side (not shown in photo but shown in the video below). Definitely will make this again!
Taco Salad:
- Romaine Lettuce, torn
- Shredded Cheese – sharp cheddar & monterey jack
- Pickled Jalapenos, chopped
- Daisy Sour Cream
- Tabla Fresca Farmstand Salsa – Cantina Style
- Taco Seasoned Ground Beef – with Siete Taco Seasoning, mild
- Quest Chili Lime Tortilla Chips
- Wholly Guacamole Single (not shown)
