This colorful cold packed lunch was a huge hit and the envy of my office! I love lunches like this that offer such a fun variety of textures and flavors. The tortellini salad is super simple to throw together and can be served warm, cold or room-temperature. The rest of the bento ingredients are all packaged items that take no time to prepare. For this lunch I used my favorite 6-Compartment Kinsho Bento Box. Here are the bento contents:
- Tri-Colored Tortellini Salad: Cooked tri-colored tortellini mixed with Italian dressing, parmesan & cracked black pepper
- Harvest Snaps Veggie Snap Pea Crisps – Parmesan Roasted Garlic flavor
- Grape Tomatoes
- Prepared Ranch Dip – I use Hidden Valley dry packets to make ahead
- Fresh Blackberries
- Trader Joe’s “Just Mango” Dried Mango slices
