This is actually a Black Bean Corn salsa recipe but it’s so good I turned it into a work lunch salad to eat on its own. I added taco-seasoned shrimp, tortilla strips (the crunch!) and fresh salsa, sour cream and lime to drizzle over. This would make an excellent wrap or soft tacos by adding to flour tortillas. I rounded out the bento with some fresh pineapple cubes for something sweet. Today’s lunch is packed in the 6 compartment Kinsho Bento Box.
