They may not look exceptionally pretty, but these “Salami Sushi” bites were a flat-out HIT as a low carb lunch at the office. Everyone who sampled them raved and keeps asking when I’m making them again! Made with only a few ingredients these simple yet satisfying bites are perfect if you’re low carb or just want to take a break from the sandwich/wrap/leftovers rotation. Here I have two different versions: salami, herbed cream cheese with blanched asparagus and salami, plain cream cheese with a dill pickle spear. The trick to assembly: line up the salami slices so they overlap and then spread the cream cheese over all slices. Add the filling (asparagus or pickle), then roll up into one long roll and slice. In this bento I also have English cucumber rounds, celery sticks, Trader Joe’s artichoke jalapeno dip, a mix of Trader Joes Marcona almonds and some fresh blackberries & raspberries.
